Ingredients:
● 2.5 lb. The Town Dock Calamari Rings and Tentacles
● 1 tsp. kosher salt
● 1/2 tsp. freshly ground black pepper
● 2 tbsp. vegetable oil
● 2 tsp. sesame oil
● 6 garlic cloves, minced
● 3 tbsp. minced lemongrass
● 2 tbsp. chopped fresh cilantro, plus more for garnish
● 1 tbsp. chopped fresh mint leaves, plus more for garnish
● 3 tbsp. fish sauce
● 3 tbsp. sake
● 1 tsp. sugar
● 1 lime, juiced, plus more wedges for serving
● 8 cups cooked jasmine rice, for serving
Preparation:
1. Pat calamari dry and season lightly with salt and pepper.
2. Heat vegetable oil and sesame oil in a large skillet over medium-high heat. Add calamari and cook until just opaque and lightly seared, about 2-3 minutes. Remove from pan and set aside.
3. Reduce heat to medium and add garlic, lemongrass, and cilantro. Cook, stirring often, until fragrant, about 1 minute.
4. Add mint, fish sauce, sake and sugar. Simmer for 30 seconds. Return calamari to pan and toss to coat. Cook another 30 seconds until warmed through, then remove from heat.
