Recipe: Calamari Miso Ramen

According to the Shin-Yokohama Ramen Museum, the Chinese noodle dish ramen was created in China and spread to Japan's local food culture. In Japan, ramen means pulled noodles, which is pulling wheat flour dough into long, elastic strips. Calamari Miso Ramen

Ingredients:
1 lb. The Town Dock Calamari Rings & Tentacles, thawed
2 tsp. sesame oil
2 tbsp. white miso paste
1 (1/2-inch) knob ginger, peeled and minced
3 cloves garlic, minced
4 cups seafood stock
3 tbsp. soy sauce
2 tbsp. mirin
1 oz. dried shiitake mushrooms
Kosher salt, to taste
1 (10-ounce) package fresh wavy ramen noodles
2 soft-boiled eggs, halved
2 radishes, cut into matchsticks
3 green onions, thinly sliced
1 tsp. black sesame seeds
Preparation:
1. Heat oil in a large saucepan over medium heat. Add miso, ginger and garlic, and cook, stirring often, until fragrant, about 30 seconds. Stir in stock, soy sauce, mirin and
mushrooms. Simmer, over medium-low heat, until flavors develop, about 15 minutes. Season with salt, to taste.
2. Add calamari rings & tentacles and noodles. Cook, stirring often, until noodles and calamari are fully cooked, about 2 to 4 minutes. Divide between 2 bowls and top with eggs, radishes, green onions and sesame seeds. Serve and enjoy.
